If I had to rank any style of food, Mexican would definitely be in my top 3. I love the richness and depth of the flavours that peek through after a good long tart marinade.
Mexican makes me happy, it makes me feel energised. I have never been to a boring Mexican restaurant and therefore Mexican night at our house is filled with loud music, laughter and normally some very lame dance moves. Mu-Chacha I hear you ask, WELL in Spanish it means , chick or young woman which actually has nothing to do with anything, but the word just sounds so cool, so years ago I named this dish Mu-chacha Guacamole…….
I really enjoy the preparation of these dishes, but they are generally the hardest to write a recipe for as I tend to add a dash of this and a bunch of that and a little squeeze of something on the side. BUT that adds to the theatre as each time I like to add a little something extra to try until it is perfectly Mu-chacha.
- 2 avocado, large
- ¼ cup lime juice
- ½ cup coconut cream
- ½ cup cilantro
- 1 Tbsp cashew butter
- ½ tsp himalayan pink rock salt, ground
- ½ tsp black peppercorns, ground
- Add all ingredients together to a food processor and pulse until chunky but smooth.
- Place in refrigerator for approximately 1 hour or until chilled.
